Surprising Facts About How Carbohydrate-Rich Foods Actually Increase Insulin Sensitivity
Robby Barbaro is the co-founder of Mastering Diabetes with myself and the co-author of the upcoming book Mastering Diabetes from Penguin Random House with me. He has been living with type 1 diabetes for 20 years and has been eating a low-fat, plant-based, whole-food diet for over 13 years.
In that time Robby has shown excellent control of type 1 diabetes with A1c results ranging from 5.6-6.6%. All while eating large quantities of whole fruits and vegetables.
Robby graduated from the University of Florida in 2011 and earned a master’s in public health from American Public University in 2019. Robby worked at Forks Over Knives for 6 years before turning his attention to Mastering Diabetes full time.
He has an inspiring Instagram account, called MindfulDiabeticRobby where he shares his lifestyle through pictures, recipe videos and documents his daily diet on Instagram stories, including graphs of his Continuous Glucose Monitor data which help dispel the myth that carbohydrate-rich foods lead to unhealthy blood glucose elevations.
